Sweet business: marshmallow production

The favorite delicacy of children and adults - marshmallow - is a sugary confectionery product, which is prepared by churning fruit and berry puree with sugar and egg white, followed by adding a certain form-forming (jelly-forming) filler to this mixture. The latter can be pectin, gelatinous or marmalade mass, agar syrup. Marshmallow can be produced in unglazed and glazed (coated) form, with chocolate usually used as the main glaze. There is no flour in the marshmallow, which distinguishes it favorably from other sweets, since it is less high in calories than, for example, cakes or cookies (therefore, many manufacturers even try to position their marshmallows as "dietary"). Moreover, due to the content of pectin and fruit puree in marshmallows, it is even beneficial for health, unlike other confectionery products. Thanks to this, the marshmallow does not lose its popularity, and the improvement of production technologies makes it possible to significantly expand the range of these products. Today, the production of marshmallows is a profitable and affordable business.

The technology for the production of marshmallows based on pectin involves the following several stages: preparation of raw materials, preparation of a mixture of applesauce with pectin and granulated sugar, preparation of sugar syrup, preparation of marshmallow mass, structure formation of marshmallow mass and drying of marshmallow halves, sprinkling of marshmallow halves with powdered sugar and their gluing.

Marshmallow production has certain nuances. On the one hand, the cooking technology of this delicacy has not changed for many decades. Of course, individual manufacturers make their own changes and improvements to it, but, in general, in essence, the technological process remains unchanged. On the other hand, in the production of marshmallows, like any other food product, it is necessary to comply with a large number of different hygiene requirements. In addition, despite the fact that the technological scheme for the production of marshmallows is much simpler than the production scheme for, for example, cookies, its assortment is much poorer. Therefore, manufacturers have to constantly look for new ways to surprise their customers while maintaining an affordable price for products and their excellent taste.
